Hi Courtney, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
I am the owner of Glazed & Confused, a small-batch bakery in Winchester, Virginia, specializing in gluten-free donuts and breakfast items. Since opening in 2021, we have grown from a traditional bakery to a dedicated resource for the gluten-free community.
We recently relocated to a commissary kitchen where we operate as a ghost kitchen three days a week, while also focusing on my favorite part of the business: catering weddings, events, and celebrations. Our entire donut menu is gluten-free, and we offer gluten-free alternatives for every item on our breakfast menu.
I am incredibly proud to provide a trusted “take-away” option for those with gluten intolerances in our historic community. I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Life is ebb and flow; to say there were no struggles would be very “rose-colored glasses” of me- Opening Glazed and Confused during the peak of the pandemic presented significant challenges, from supply chain interruptions and ingredient shortages to health mandates and reduced consumer capacity. These obstacles taught me a great deal about shifting demand patterns and the necessity of rapid adaptation. To meet these challenges, we leveraged technology through DoorDash and specialized pick-up services to diversify our revenue and maintain strong customer relationships. Building on this momentum, I restructured the business in 2026 by relocating to a commissary space. This move allowed for the launch of our ghost kitchen, catering, and events services.
