Hidden Gems: Meet Paul And Rebecca Williams of Waters Edge Winery and Bistro Midlothian

Today we’d like to introduce you to Paul And Rebecca Williams.

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
We moved to Midlothian in 2014 with our three wonderful boys. We truly love the community and have proudly served it through Boy Scouts, School Organizations and Huguenot Little League.

Paul’s love of wine started as a child on his Dad’s farm. Elderberry, pear, apple and plum mixed with curiosity and a lot of free time turned Paul into a wine maker. Careers in accounting, consulting and IT give Paul a leg up on the business side of this new adventure.

We are very excited to introduce globally sourced but locally made wine to Midlothian. We will provide you, your friends, and your family with a warm and inviting atmosphere complete with wine making, wine tasting, and wine drinking.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It has been far from a smooth road, but that is expected from a new build project. One of the hardest parts has been how many different people are truly involved in the process; when you add more people, the risk for mistakes and miscommunication increases. There have been a lot of highs, though, including Paul getting to build many of our pieces in the winery and our wonderful team sticking it out while our opening date was continuously pushed back.

As you know, we’re big fans of Waters Edge Winery and Bistro Midlothian. For our readers who might not be as familiar what can you tell them about the brand?
Waters Edge Wineries is a franchise that has amazing relationships with many vineyards around the world. Each franchise location makes, bottles, and labels wine on site from globally sourced grapes. Our hospitality and open, welcoming introduction to wine sets us apart from other wineries. We want readers to know about our Owners Club. It is the highest tier of our wine club and includes DAILY tastings for you and a guest, discounts on wine and merch, custom labels for birthdays and anniversaries, and so much more. Our owner and winemaker, Paul, has a deep love and excitement for not only making wine but sharing it with his community.

Can you share something surprising about yourself?
Because Waters Edge is a franchise, we have the ability to set ourselves apart from the other locations. We have done so by hyper-focusing on our local community. We have purposefully given all of our wines fanciful names after neighborhoods in the area, and have done many events to outreach to our incredible community. Rebecca has truly put a lot of thought and effort into making sure our menu is balanced and attainable to everyone in our community. We have also sourced local meats, breads, candles, and had our Director of Marketing design all of our merch. We truly love our community and hope everyone feels represented when walking through our doors.
