Today we’d like to introduce you to Amber Jackson.
Hi Amber, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
New Mornings Coffee is inspired by the stories in Trujillo, Peru. A small city outside of Lima, Peru where a quaint coffee shop operates as a non-profit to employ orphan young adults striving for a better life than what they have known. The mission of Rhiza coffee is just that, to empower these young adults through careers in artisan coffee while building community and economical independence. Rhiza Coffee is a 501(c)(3) and New Mornings Coffee donates a portion of profits to further drive their efforts. We, Amber and Tommy, recently visited the city of Trujillo, Peru to meet with one of the baristas and hear amazing story. For New Mornings, we realize that the average morning cup of coffee truly is a luxury. The busy morning coffee rush that corporate life calls so many working Americans to has no room for reflection or impact. It is in those moments of reflection that we remember coffees origin, its roots. Coffee is a ritual for so many, and our goal is to bring purpose to the ritual, infusing hope into every pour. Someone across the world is looking for that hope, and New Mornings coffee strives to be the bridge to connect ritualistic coffee to a purpose driven craft of community.
Amber got her start in the artisan espresso space working at a small coffee shop in Loudoun County Virginia. She now owns and operates New Mornings Coffee with the support of her husband, Tommy.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Starting up any business has its road bumps, but for us, this actual came with a struggle with my health the months leading up to our launch.
I was diagnosed with a uterine fibroid that had taken up the size of what my uterus used to be. In the 7 month span that I had the fibroid, it had grown to be the size of a grapefruit. A developing baby of that size would be around 22 weeks in comparison. While attempting to make the lifestyle changes I hoped would bring results, the fibroid grew at an exponential rate that doctors said they only see women in their 40s have. A snowstorm hit the end of January 2026 in Loudoun County, right when my health took a drastic turn. My hemoglobin was at a dangerous 4.9, resulting in 2 major surgeries, one of those was essentially a C-section to remove the tumor. The official name of the surgery was a laparoscopic myomectomy.
Our launch date was originally set to be January 14th, but we postponed due to my health concerns. After a successful few weeks of recovery, New Mornings Coffee officially launched on March 22nd, 2026.
Thanks – so what else should our readers know about your work and what you’re currently focused on?
Connecting with people is a natural joy and passion of mine. I’ve worked in professional hospitality, ministry, and of course the artisan coffee space. I have served musically in singing and violin most of my life, which has been a great way to bring community together.
Do you have any memories from childhood that you can share with us?
A favorite childhood memory of mine is my grandfather teaching me how to ride a bike when I was a little girl in our small town baseball field. He has been and continues to be one of my biggest cheerleaders in us starting New Mornings Coffee.
