Today we’d like to introduce you to Lance Nelson.

Hi Lance, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
I commenced my food truck venture by repurposing a camper that was graciously gifted to me. I meticulously dismantled it, transforming it into a functional food truck equipped with a patio. Throughout this process, I relied on television and self-directed learning to acquire the necessary skills.
After a year of operation, I relocated my food truck to a brick-and-mortar establishment situated at 1706 East Main Street in Shockoe Bottom. Regrettably, this building was engulfed in flames on July 25, 2025. Consequently, we have since relocated to our current location at 1800 East Main Street.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
In fact, I experienced both the initial and second phases of COVID-19. During this period, the economic situation was more favorable compared to the aftermath of the pandemic when financial resources dwindled. Consequently, we faced challenging times and were compelled to take loans.
To manage our expenses, we devised various strategies. Unfortunately, our payroll department lacked sufficient knowledge, so I had to learn on the job. Consequently, I spent all my savings. Despite these hardships, I remained determined and continued to retain all my employees. However, I had to let go of my manager due to the inability to cover their salary. This was the turning point that prompted me to embark on self-education.

Can you tell our readers more about what you do and what you think sets you apart from others?
From my work experience, I have learned that being fully immersed in the business is crucial for success. This entails actively participating in every aspect of the operation, including the kitchen, the bar area, and the administrative tasks behind the scenes. A successful owner must possess a comprehensive understanding of all roles within the business. This includes not only acknowledging the challenges and responsibilities associated with each position but also possessing the necessary skills to effectively manage the kitchen. The kitchen is the cornerstone of the business, and its success directly impacts the overall performance of the establishment.

Furthermore, being a business owner is contingent upon your ability to produce all the necessary goods and services within the kitchen. This knowledge ensures the continuous operation and profitability of the business.

Are there any books, apps, podcasts or blogs that help you do your best?
My preferred literary work is “The Keys of Life,” which I conceptualized and authored through self-directed learning. I engage in introspection, revisiting solutions mentally. The process involves questioning oneself, essentially testing one’s understanding. I meticulously analyze each scene, applying its principles to my life experiences. Subsequently, I derive the appropriate solutions. There are no definitive right or wrong answers to life; rather, continuous progress and learning are paramount.
