Hidden Gems: Meet Travis Penn of Delta Blues BBQ

Today we’d like to introduce you to Travis Penn.

Hi Travis, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Delta Blues BBQ was built on a simple belief: great barbecue can’t be rushed.

What began as a passion for smoking meat the traditional way slowly grew into a dream of creating a place where people could gather over incredible food, live music, and Southern hospitality. We didn’t set out to build just another restaurant—we wanted to build an experience.

The name Delta Blues pays tribute to the Mississippi Delta, where two timeless traditions were born: authentic barbecue and the Blues. Both tell stories of hard work, perseverance, and soul. Just like great music, great barbecue is crafted with patience, passion, and heart.

Every morning before sunrise, our smokers are loaded with fresh brisket, pulled pork, ribs, chicken, and sausage. Using hickory wood and time-honored techniques, we smoke our meats low and slow for up to 16 hours. We prepare everything fresh each day, and when we’re sold out, we’re sold out. That’s our commitment to quality.

As we’ve grown, one thing has never changed: our mission is to create a place where families gather, friends reconnect, travelers feel at home, and everyone leaves a little happier than when they arrived.

Whether you’re joining us for barbecue, live music, catering, or simply good conversation, you’re more than a customer—you’ve become part of the Delta Blues family.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Not long after opening our doors, we faced challenges that no one could have predicted. The COVID-19 pandemic turned the restaurant industry upside down. Overnight, dining rooms closed, uncertainty became the norm, and every day brought a new obstacle. Like so many independent restaurants, we fought through supply shortages, rising food costs, and one of the toughest labor shortages our industry has ever experienced.

There were moments when giving up would have been the easier path. Instead, we adapted, worked longer hours, leaned on our incredible team, and stayed committed to the people who supported us. Our guests kept showing up, ordering takeout, buying gift cards, telling friends about us, and reminding us why we started this journey in the first place. Their loyalty carried us through some of our darkest days.

Today, Delta Blues BBQ is more than a restaurant. It’s a testament to resilience, faith, hard work, and the belief that good food has the power to bring people together. Every challenge we’ve faced has strengthened our commitment to serving authentic barbecue and creating memorable experiences for every guest who walks through our doors.

Appreciate you sharing that. What should we know about Delta Blues BBQ?
At Delta Blues BBQ, we’re more than a restaurant—we’re a hospitality company built around bringing people together through great food, live music, and genuine Southern hospitality.

Our flagship brand, Delta Blues BBQ, specializes in authentic, hickory-smoked barbecue prepared fresh every day. We smoke our brisket, pulled pork, ribs, chicken, and sausage low and slow for up to 16 hours, because we believe great barbecue simply can’t be rushed. Alongside our barbecue, our family of brands includes Tin Roof Kitchen Co., known for handcrafted pizzas and smash burgers, and Delta Blues Dockside, our seasonal waterfront restaurant that combines fresh food, live entertainment, and a unique lake experience.

What sets us apart is that we don’t just serve meals—we create experiences. From live music and welcoming dining rooms to catering weddings, corporate events, and community gatherings, our goal is for every guest to leave feeling like family.

Like many independent restaurants, our journey hasn’t been easy. We opened our doors only to face the unprecedented challenges of the COVID-19 pandemic, followed by historic labor shortages, supply chain disruptions, and rapidly rising food costs. Those years tested us in every way imaginable, but they also strengthened who we are. We adapted, worked harder than ever, invested in our people, and remained committed to serving our communities with the same passion that inspired us from the beginning.

We’re most proud of the trust we’ve earned from our guests. Their support allowed us not only to survive difficult times but to continue growing, opening new concepts, creating jobs, supporting local organizations, and investing back into the communities we call home.

Our brand is built on authenticity, consistency, and heart. Every decision we make is guided by our belief that fresh food, quality ingredients, Southern hospitality, and memorable experiences never go out of style.

Whether you’re joining us for slow-smoked barbecue, live music, catering, or a meal with friends and family, we want every visit to feel like coming home.

What matters most to you?
At Delta Blues BBQ, we believe the customer experience is our most important product. Great food may bring someone through the door the first time, but how we make them feel is what brings them back.

Every decision we make—from smoking our meats fresh every day, to greeting guests with a smile, to keeping our restaurants clean, to featuring live music and creating welcoming spaces—is made with one goal in mind: giving every guest an experience worth remembering. We want families to celebrate milestones with us, friends to gather around the table, travelers to discover something authentic, and every guest to leave feeling appreciated.

That commitment became even more important during the challenges of the COVID-19 pandemic and the labor shortages that followed. While many things around us changed, our focus never did. We continued investing in our people, improving our operations, listening to guest feedback, and finding better ways to serve our communities. Every compliment and every criticism became an opportunity to improve because we know our guests are trusting us with their time, their money, and the moments that matter most.

We often remind our team that we aren’t simply serving barbecue or pizza—we’re serving experiences. A perfectly smoked brisket can be forgotten if the service falls short, but when exceptional food is paired with genuine hospitality, people remember it, talk about it, and return with friends and family.

At the end of the day, our success isn’t measured only by sales or the number of restaurants we open. It’s measured by the smiles around our tables, the memories created in our dining rooms, and the relationships we build with the communities we serve. That’s why customer experience will always be at the heart of everything we do.
